Where does the oil go?

Look closer with me. Dried kibble has small spaces inside. During vacuum coating, pressure changes help added liquid enter those pores. This is where Spanish olive oil joins Dr Hahnz dry food, after drying.

That answers how oil gets into the kibble. What Oscar or Luna absorbs after eating is another question; I need evidence about the finished food to answer it.
